Day 10: Yummy! Holiday! Shortbread!

I’ve cut back this holiday season, and I’m proud to admit it.

By which I mean—I’ve reached the age where I realize and (mostly) accept a person (namely me) can’t do everything to the extreme all the time especially during the holidays and therefore, I’ve cut corners.

Case in point: our drapey tree. We have three bins of ornaments, and when I’d hung, oh, I’d say two-thirds of the first box, I stepped back, looked things over and pronounced: THIS HERE TREE IS DONE.

Could it have held more ornaments? Yes. Would it have been more fabulous with all the ornaments? Without a doubt. Did it look pretty, just as it was? Yes. Decision made.

Here’s another example.

I was delighted to host our church circle Christmas gathering last week, which included a festive casual meal followed by our traditional Dirty Santa gift exchange during which all the proverbial gloves come off. (We are very serious about both of these, in particular the Dirty Santa you ain’t seen nothing like a bunch of Presbyterians stealing round after round in an effort to end up with the lovely pottery nativity made by Cindy’s niece.) Anyway, I was providing dessert, and I marched myself right over to Trader Joe’s where I bought two boxed TJ chocolate sweets (corner cut!) and the stuff to make SIX INGREDIENT Cranberry Orange Shortbread Cookies.

They were a smash, let me tell you, and I mean both the shortbread and the TJ treats, in particular the Dark Chocolate Covered Peppermint Joe-Joe’s.

Anyway, I thought you might like a recipe for a yummy holiday shortbread cookie made with six ingredients you probably already have on hand!

  • dried cranberries
  • sugar 
  • all purpose flour
  • cold butter
  • almond extract
  • an orange

Bonus? You make this dough, roll it into a log, and it will sit patiently in your refrigerator (or freezer) until you’re ready to slice off a few cookies and bake! Find full instructions where I found them, at the blog Mom On Time Out!
